Its roots go deep into the ground and absorb water in the summer months and during times of drought. The ancient Greeks placed such importance on the olive tree that they kept an olive tree on the Acropolis in honor of the goddess Athena and crowned the winners of the Olympic Games with wreaths of olive leaves.

The first country in olive cultivation is Spain, second Italy, third Greece, followed by Turkey, Tunisia and other Mediterranean countries. After the discovery of America, olive cultivation “migrated” to Argentina, Chile and California, which have a climate like the Mediterranean.

As for Greece, the olive tree is cultivated in areas of mainland Greece that are close to the sea and especially on the islands, with Crete first, followed by Lesvos, Corfu and the other islands, including Karpathos.

According to a family tradition, the cultivation of olive trees in Karpathos was brought from Crete by Alexis Alexakis. Of course, the cultivation of olive trees in Karpathos was known since ancient times, but this tradition may have some connection with the cultivation of olive trees in Karpathos, because during the years of piracy the Karpathians from the lowlands, where the olive tree thrived, withdrew to the mountains, as confirmed by Ross who visited Karpathos in 1843 and found olive cultivation in the lowlands neglected.

Τα μεγάλα λιόφυτα ανήκαν στους «κανακάριδες» και «κανακαρές». The large olive fields belonged to the big landowners.

According to this tradition: When the Revolution of 1821 broke out in Crete, Nicholas Alexakis took his men and went to the mountains to fight the Turks. In a battle, he and his children who were fighting with him were killed, and the only one who survived was his brother Anastasius, who arrived in Karpathos on a Kassian sailboat and in 1827 brought his nephew Alexis, who due to his age had not gone with his father to fight. Later, with the help of his relatives, he sold what was saved from his father’s property and with the proceeds he bought large estates in Karpathos and became “kanakaris” (big landowner). He settled in Aperi and in 1840 he married Zoe Pyliati, one of Aperi’s “kanakaras”.

Alexakis was devoted to olive cultivation, planted many “halous” (branches of olive trees) that he brought from Crete and grafted many wild olive trees on the plain of ancient Poseidion. At first, Alexakis encountered great difficulties because the goats of Lentos, a shepherd of the area, destroyed the young olive trees. Lentos paid no attention to Alexakis’ complaints and protests, who wanted to turn the valleys of Karpathos into Cretan olive groves. Indignant, Alexakis brought a rifle from Crete and with it he killed Lentos’ goats when they approached the olive trees. Ultimately, the battle was won by Alexakis’ olive trees, because the largest olive groves of Karpathos developed in the plain of Poseidion and from there olive trees cultivation expanded to other villages.

This tradition is supported by the fact that the olives of Rhodes are much larger than the olives of Karpathos, which are the same size as those of Crete. Also, Vangelistra’s priest, Nicholas Sakellaridis, born in Menetes around 1860, used to say that when he was young there were few olive trees starting from Pigadia and going towards Voutsas.

Most of the olive trees in Pigadia belonged mainly to Aperitans “kanakaras” and “kanakarides”. The olive trees bore olives for one year and rest the next, limiting their production. According to Slita, the first agronomist of Karpathos after the union with Greece, in the good year the oil production of Karpathos exceeded 50,000 okas (1280 grams per oka).

The olive harvest begins in October, after the first rain, and lasted until December, and if it was late in raining, it went until January. Because the size of the olives of Karpathos is small but with a high oil content, it requires fast and many hands. The “koftrouses” (women who collect the olives) with a basket in their waists climbed onto the olive trees or around with the tripod ladders to harvest the olives. They left a few olives on the tops of the olive trees for the birds that had their nests to eat. Each woman harvested around two and a half “modia” (a modi is equivalent to 16 kilograms).

Given that a “modi” of olives yielded around two and a half okas of oil and each olive cutter gathered around two and a half “modia” per day, the 50,000 okas of olive produced in a good year, were equivalent to 20,000 modia of olives and 8,000 working days. For those who had a few olive trees in Pigadia and for those who lived in the villages, there was no problem, since each housewife gathered the olives with her family or with the labor exchange of another housewife.

The Kanakaras of Aperi had a problem, as they did not have the required number of workers. After the feast of the Cross in the Castle, they would go down to Poseidion to prepare their stables, wash the “panopithia” (pitchers to store the olive) and find “coftruses” (olive picker workers), usually the same women they had in previous years, from Olympos, Arkasa, Menetes and Pigadia. For the coftruses who did not have a relative’s house in Pigadia, Kanakara would find a stable to stay. The daily wage was 300 drams of oil (equivalent to 960 grams) with a lunch of stewed cod.

Every day when the olive harvest finished, an “alethuriaris” (mill worker) would come to the olive grove to transport the olives to the “kanakara’s” stable. That same evening, two or three coftruses would come to kanakara’s stable and, by lamplight, would separate the olives from the olive leaves. After a week or two, alethuriaris would come to transport the olives from the stable to “alethurio” (olive mill).

During the Turkish occupation, the Karpathians used wooden presses to squeeze and extract the oil from the mashed olives. Later, with the development of olive cultivation, they brought iron presses. Around 1890, Nicholas Alexakis built an olive mill in Kyra Panagia next to Myli’s rivulet with the first iron press that came to Karpathos. Subsequently, in Pigadia, the olive mills of Nicholas Pahountis (Antimisiaris), Nikitas Lyristakis, Venetsiana Nikitiadi, Vasilis Sarris and Michael Makris were equipped with iron presses.

Alexakis’s oil mill consisted of a large room (10X20 meters). On one side was the mill where the olives were grounded and on the other the iron press where the mashed olives were squeezed. The mill had four stone cylinders, the inner one was larger in diameter but thinner than the others, which as they moved from the center outwards the diameter decreased, and their thickness increased. Above the mill was a “musandra” (wooded platform), in the middle of which above the center of the mill there was a “kofinia”, wooded inverted four-sided truncated pyramid one meter high.

The press consisted of a square iron base one meter long and 10 centimeters thick, above which another iron plate of the same dimensions moved vertically. Next to the iron press was a vertically placed tall pine trunk connected by a thick rope to the iron press, which rotated with the help of iron levers, raising and lowering the iron plate.

Each olive mill was associated with the alethuriaris (millers), the father with his sons who had two or three mules. The millers transported the olives from the field to the owner’s house and from there, when enough were collected, to the olive mill. They emptied the olives into the “kofinia” and adjusted it’s opening so that they slowly fell into the center of the mill. As the mules turned the stone cylinders, the olives were mashed and because the floor of the mill declined from the center to the periphery, the pulp moved outwards and fell into a stone pit located on the periphery of the mill.

From the stone pit, the mill workers took the pulp and put it in square blankets made of goat wool and folding them from the four corners they took the shape of one square meter bags. They stacked ten bags in the iron press and squeezed them until the oil came out mixed with black juices, which ran inside the vessel. The housewife collected the oil that floated to the top, at first with a small tin can and then with her palm and put it in tin cans. The mill workers carried the tin cans to the housewife’s house, and she emptied the oil into pitchers. The mill workers’ payment was one oka oil for every ten modia of olives, along with the standard meal.

One oka oil for ten modia of olives was given to the mill owner, who has additional benefits: The black juices that remained in the vessel were thrown into an underground cistern. When the olive season ends, the mill’s owner will open the cistern and extract several okas of “amurga”, inedible oil with many acids but suitable for making soap.

The pits left over from the pressed olives were burned in fireplaces, ovens and braziers or mixed with the feed given to pigs. If the olive producer did not want them, the mill’s owner kept them and sold them to merchants who transported them to Rhodes and sold them to soap factories. They boiled them in huge cauldrons and made soap with pomace oil.

As soon as the olive harvest was over, the pruning and digging around the olive trees began. To propagate the olive trees, they cut large branches two to three meters long, cut off their side branches and placed two or three in a pit one meter deep. They made sure that the bottom of the pit was moist and when it did not rain, they poured water into the pit.

When these branches began to develop root, they were transplanted into a field intended for olive grove, keeping them ten meters apart. After five years, they began to bear olives, and thirty years passed before they grew up to big size olive trees. That is why, for anyone who planted them, it was said that he did not do it for himself, but for his children and grandchildren.

When the tree began to grow old, its trunk was cut one meter above the ground and where the trunk was cut, it was covered with mud and a slab was placed on top. The following year, branches began to emerge and slowly grew and after four or five years began to bear olives. As the branches grew, they were pruned in such a way that they grew horizontally and vertically, taking on the so-called cup-shape, making it easier to pick the olives.

Read more…

[144
9
post-19320","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-144","tag-a-tag
["GET
